1 1/2 cups of Apple Cider Vinegar
3 Apples
2/3 cups of Granulated Sugar
Dice your apples into very small pieces and place in a quart sized mason jar. Add the vinegar and sugar over the apples. If there’s room at the top of the jar, add a few more splashes of vinegar. (And if you have a sprig of rosemary or thyme lying around, add it!)
Fit the lid on the jar and shake it up a few times, distributing the sugar .Place the jar in your fridge and leave it there for 3-5 days, shaking once or twice in the waiting period.
After three days, taste your shrub. If you’re into the flavor, strain the apple out and store in an airtight container. Pour over ice and mix with sparkling water or cocktails!
